Mom and I took a trip to Ephrata this morning to give Tifini her updated car insurance. On the way to work, she got quite the scare. A truck pulled onto the highway right in front of her and wasn't getting up to speed. In order to avoid hitting him, she went off the road. No air bags deployed, no injuries were sustained, and no damage was done to the car. But it could have been very bad. She got back on the highway and not a mile later hit dense fog. She told mom that if he'd pulled out in that fog, she would have hit him. So we're counting blessings today. But it was then she realized that her insurance card in her car had just expired. The current one was still at home. So mom and I went over to give it to her. And to give her a hug before she left for Olympia. While we were in Ephrata, we looked for the Civil Air Patrol, where Dallin is doing his Eagle Project. We drove around for almost 20 minutes and couldn't find it. We'll ask Vaughn at some point where it is.
We headed home and stopped by the new Taco Bell in Moses. Old location, but brand new building. We went in and had some lunch. The layout is different and interesting. We came home, did a little cleaning, and prepped for canning chicken. While we waited for the jars to wash, we made chicken fajitas for dinner. I helped mom cut the chicken and get the canning supplies, but then I had to leave for institute. I felt bad leaving mom to do all the work, but I really enjoyed institute tonight. Not surprisingly, when you do the reading you get more out of the class. We finished up 1 Nephi and talked about the importance of keeping records.
When I got home from institute, mom had mostly finished canning. They pressure canner had another half hour, but then it was done. Mom had also taken out the trash, but left the basement to me. So I took out the downstairs trash. Anyway, here is the end product: 16 pints of chicken.
